Super Sweet Fall Treat
Pumpkin Squares
To everyone out there who has never had a pumpkin square, I encourage you to try these “squares of joy”. A Pumpkin Square is just like a pumpkin roll, but instead of a roll up formation its formed in little square bites.
Ingredients:
Eggs (2)
Sugar (3/4cup)
Vegetable oil (1/2cup)
Pumpkin puree (1/2can)
All purpose flour (1cup)
Baking powder (1 teaspoon)
Baking soda (½ teaspoon)
Ground cinnamon (1 teaspoon)
Salt (½ teaspoon)
Cream cheese (½ cup )
Butter (¼ teaspoon)
Vanilla extract (½ teaspoon)
Power sugar (1 cup)
Instructions
*Preheat oven to 350℉
To begin, mix the eggs,sugar,oil, and pumpkin puree in a medium size bowl until fluffy. Then sift all the dry ingredients together in a separate bowl (exclude powder sugar). Once you have sifted the dry ingredients together, slowly add the sifted mixture into the pumpkin mixture while stirring. After both mixtures are well combined, spread the batter evenly on a jellyroll pan.
Bake for 25-30 minutes.
Once the batter is done baking, set aside to cool.
While the pumpkin “cake” is cooling, cream together cream cheese and butter. Add vanilla once creamed. Slowly add powder sugar. Beat together until smooth, then spread evenly across Pumpkin cake. Chill for 10 minutes, then cut into squares.
